Ingredients

  • 1 onions, peeled and chopped
  • 1 carrots, peeled and roughly chopped
  • 6 russet potatoes, cut into bite size pieces
  • 3 lbs lamb stew meat, cubed
  • 1 can of Guinness Stout
  • 1 tsp thyme
  • 4 tbs parsley, chopped
  • 1 cup beef broth
  • 1 tbs flour
  • 1 1/2 tbs butter
  • 2 tbs canola oil
  • salt and pepper

Directions

Preheat oven to 350 degrees.

Heat a dutch oven or an oven proof pot over medium high heat. Add the oil and heat through. Add the lamb and cook until brown on all sides. Remove from the heat and add the vegetables, parsley, thyme, stock and beer. Season with salt and pepper and stir to combine. Cover and place in the oven. Cook the stew for 1 ½ hours or until the lamb is tender and vegetables are cooked through.

Remove the pot from the oven, place on medium high heat on the stove. Remove the lid. Mix the flour and butter together and stir into the stew. Cook until the broth is thick and gravy like and test the seasonings. Garnish with some more parsley and serve.
