Ingredients

  • 8 slices of bacon, thick cut if possible
  • 8 links of breakfast sausage
  • 4 tomatoes, thickly sliced
  • 1 cup mushrooms, sliced
  • butter, as needed
  • salt and pepper to taste
  • 4 eggs
  • 1 recipe homefries

Preparation

Directions

Heat a large fry pan over medium high heat.

Add the bacon and sausage to the pan and cook until starting to brown, flip over and cook until just browning on this side as well, about 8-10 minutes . Remove from the heat and set aside on some paper towels.

Add butter to the pan if there isn't enough fat in the pan. Toss in the mushrooms and sauté until golden, about 8 minutes. Remove and set aside.

Put the tomatoes in pan and cook until starting to soften, about 5 minutes.

Push the tomatoes off to the side and add more butter if needed.

Crack an egg into a bowl and gently pour into the pan. Do the same with the rest of the eggs.

Put the mushrooms, bacon and sausage back into the pan.

Cook until the eggs are to your done to your liking. (Find egg cook times and methods here)

Season with salt and pepper and serve everything with homefries or boxty on the side.
