Ingredients

  • Crust
  • 3/4 cup graham cracker crumbs (5 whole crackers, broken into rough pieces and processed in a food processor until uniformly fine)
  • 2/3 cup unbleached all purpose flour
  • 1/3 cup confectioners' sugar
  • 1/2 teaspoon salt
  • 7 tablespoons unsalted butter, cold, cut into 1-inch pieces
  • Filling
  • 12 ounces semisweet chocolate morsels
  • 1/3 cup heavy cream
  • 2 cups minature marshmallows

Preparation

Step 1

For the Crust: Adjust an oven rack to the middle position adn heat the oven to 375 degrees. Spray an 8 x 8 inch baking pan with nonstick cooking spray. Fold two 16-inch pieces of foil lenthwise to measure 8 inches wide. Fit one sheet in the bottom of the greased pan, pushing it into the corners and up the sides of the pan (the overhand will help in removal of the baked bars). Perpendicular to the first sheet, fit the second sheet in the pan in the same manner. Spray the foil with nonstick coooking spray.

Pulse the graham cracker crumbs, flour, confectioners' sugar, and salt in a food processor workbowl fitted with a steel blade to combine. Add the butter nad process to blend, 8 to 10 seconds, then pulse until the mixtures is pale yellow and resembles coarse meal, about 3 1-second pulses. Sprinkle thte mixture into the lined pan and press firmly with your fingers into an even layer that covers the entire pan bottom. Bake the crust until golden brown, 18 to 20 minutes. Use the foil handles to gently lift the crust from the pan. Cool the crust on a wire rack for 10 minutes, then return it to the cooled baking pan with the foil handles in place.

For the filling: While the crust is cooling, place the chocolate in a medium bowl. Bring the cream to a boil and pour it over the chocolate. Cover the bowl with plastic wrap and allow the chocolate to soften for 3 minutes. Whisk the chocolate until smooth. Pour the chocolate mixture over the cooled crust, using an offset spatula to spread it evenly.

Adjust an oven rack to the hightest postion and heat the broiler. Assemble the marshmallows in an even layer over the top of the chocolate, gently pressing them into place. Broil until lightly browned, 1 to 2 minutes. Chill in the freezer until firm, about 25 minutes. Pull the overhanging foil to remove the entire bar from the pan. Place the bar on a cutting board, cut it into 9 squares, and serve.
