This is a wonderful salsa recipe from my friend Mary - I added hot sauce and extra peppers to get to a medium as it is fairly mild.

Ingredients

  • 8 cups of roma tomatoes (peeled, chopped and drained)
  • 2 1/2 cups of chopped onion
  • 1 1/2 cups of green peppers
  • 1 large (25m) jalapeno peppers (for mild)
  • 3 - 5 garlic cloves minced
  • 2 t cumin
  • 2 t pepper
  • 1/8 cup canning salt
  • 1/3 cup sugar
  • 1/3 cup cider vinegar
  • 1 15 oz can tomato sauce
  • 1 12 oz can tomato paste

Step 1

When canning it works best to measure out dry ingrediants ahead of time and put in baggies as it goes faster. Also works best to have green pepper and onion chopped up and ready for as many batches as you think you will be making.

Mix all together and bring to a slow boil for 10 minutes. Seal in jars and cook in hot water bath for 10 minutes. Yields 3 quarts or 6 pints.
