Ingredients
- 2 large carrtos, cut into 1/2" thick rounds
- 2 russet potatoes, peeled and cut into 1/2" cubes
- 2 medium turnips, cut into 1/2" cubes
- 2 medium onions, cut into 1/4" dice
- 2 med. parsnips, cut into 1/4" rounds
- 2 medium sweet potatoes, peeled and cut into 1/2" cubes
- 1/4 t. ground cinnamon
- 1/4 c. extra virgin olive oil
- grated zest of 2 oranges
- salt and pepper
- 1 bunch chives, finely chopped

Preparation
Step 1
1.Bring the carrot, potato, turnip, onion, parsnip, sweet potato, and water to cover to a boil in a 4 quart saucepan.
2.Lower to a simmer and cook untilo all the vegetables are soft, about 15 minutes.
3.Drain the vegeatable and pass through a food mill or mash thoroughly by hand.
4.Stir in the cinnamon, oil, orange zest and season with salt and pepper.
5.Stir in the chives and serve.
