Ingredients

  • 2 lbs stir-fry beef strips
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1/2 c hoisin sauce
  • 1/2 c beef broth, divided
  • 2 Tbsp rice vinegar
  • 1-1/2 tsp minced garlic
  • 1/4 tsp crushed red pepper
  • 2 Tbsp cornstarch
  • 1 (12 oz) pkg steam-in-the-bag fresh broccoli, cooked according to package directions
  • 2 (8 oz) pkgs wide lo mein noodles, cooked according to package directions

Step 1

Sprinkle beef with salt and pepper, and add to a 4- to 5-quart slow cooker.

In a small bowl, whisk together hoisin, 1/4 c beef broth, vinegar, garlic and crushed red pepper. Pour over beef, and stir to combine. Cover and cook on LOW for 6 hours or until beef is tender.

Increase slow cooker to HIGH. Whisk together cornstarch and remaining 1/4 c beef broth until cornstarch is dissolved and mixture is smooth. Stir cornstarch mixture into cooker, and cook, uncovered, for 30 minutes or until thickened.

Just before serving, stir in broccoli. Serve beef and sauce mixture over noodles.
