Irish Soda Bread

Soda bread can be prepared in minutes and is excellent served warm, fresh from the oven. Use all-purpose flour to create bread with a finer texture.

Ingredients
- 2 C all-purpose flour
- 2 C whole-wheat flour, plus extra for dusting
- 1 t salt
- 2 t baking soda
- 2 t cream of tartar
- 3 T butter or lard
- 1 t sugar
- 1 1/2 - 1 2/3 C buttermilk

Step 1
1. Preheat oven to 375 F. Lightly grease baking sheet. Sift flour and salt into large bowl.
2. Add baking soda and cream of tartar. Rub in butter. Stir in sugar.
3. Pour enough butter milk to mix to a soft dough. Do not over-mix or bread will be heavy and tough. Shape into one or two rounds on lightly floured surface.
4. Place on baking sheet and mark a cross using a sharp knife, cutting deep into dough.
5. Dust lightly with flour and bake 35-45 minutes for one round or 25-30 minutes for two or until loaf/loaves are well risen and sounds hollow when tapped on bottom. Serve warm.
