  • 1 medium blood orange, peeled and sliced
  • 3 cups packed baby arugula
  • 2 Tablespoons lime juice
  • 2 Tablespoons olive oil
  • 1 Tablespoon chopped fresh tarragon
  • 2 teaspoons finely chopped jalapeno
  • 1/4 teaspoon salt
  • 1 chopped avocado
