Baked Sweet Potatoes

Ingredients

• 4 Medium Sweet Potatoes
• olive oil
• 4 tbls butter
• 4 tbls brown sugar
• 3 tsps ground cinnamon

Preparation

Step 1

Preheat oven to 425F. Wash and light scrub potatoes. Drizzle with olive oil and rub oil all over skin. Place on a baking sheet and bake for 45-55 minutes or until fork pierces through the potato easily.
Meanwhile, combine butter, sugar, and cinnamon in a small bowl. Return to refrigerator until potatoes are ready to serve.
Remove from oven and let cool slightly before splitting open to serve. Top with a tablespoon of sweet cinnamon butter.
