Seared Nectarines with Brown Sugar Yogurt

- 1/2 cup plus 4 teaspoons brown sugar
- 4 nectarines, cut in half and pits removed
- 1 1/2 cups plain low-fat yogurt
- 2 teaspoons vanilla extract
- If you like, make the recipe even simpler by using vanilla yogurt (skip the extract).

Preparation
Step 1
1. Spread 1/2 cup brown sugar onto a plate. Press cut side of nectarines into sugar.
2. Heat a lightly greased or nonstick pan over medium-high heat. Place nectarines on pan, sugar side down. Cook 1 minute or until golden. Carefully transfer to serving dishes (1 or 2 halves per serving). Drizzle with any sugar syrup from pan.
3. Mix yogurt with vanilla and divide among 4 serving cups. Sprinkle each with 1 teaspoon brown sugar and let stand 1 minute until sugar softens. Serve with warm or room-temperature nectarines.
