Ingredients
- 3/4 cup plain bread crumbs
- 1/2 tsp dried oregano
- 1/4 tsp salt
- 1/8 tsp freshly ground black pepper
- 1 egg white
- 1 top round steak (~ 12oz), trimmed & cut into 8 even strips
- 2 Tbsp olive oil

Step 1
On waxed paper, combine bread crumbs, oregano, salt, and black pepper. Mix well. In a shallow dish, lightly beat egg white.
Place the steaks on a waxed paper-lined work surface. Using a kitchen mallet, pound them to a 1/2" thickness. dip each steak into egg white, allowing excess to drip back into dish. Dredge steaks in bread crumb mixture, turning to coat.
In a large skillet, heat oil over med-high heat until it is hot but not smoking. Add steaks to skillet. Cook, turning once, until golden and crisp on both sides, about 8 min.
Place steaks on serving plates. Sprinkle with parsley.
