Ingredients

  • 1 1/2 lbs lean ground beef
  • 1 medium onion, chopped
  • 1 28-oz can diced tomatoes
  • 6 cups beef broth
  • 1 can tomato soup
  • 4 carrots, chopped
  • 3 celery stalks, chopped
  • 2 bay leaves
  • 1/2 cup pearl barley
  • 3 potatoes, cubed
  • 3/4 tsp. pepper
  • salt to taste

Step 1

In a large dutch oven or soup pot, brown meat well (be sure to have some crispy brown bits- this adds beefy flavor). Drain meat and add onions. Continue to cook over medium heat just until onions begin to soften.

Add all other ingredients except potatoes. Bring to a simmer then cover and cook for 2 hours, stirring occasionally. Add cubed potatoes and cook just until potatoes are tender. The soup is now ready to eat, and the leftovers will be extra delicious the next day. Enjoy!
