FRIED****Secret Ingredient Ham Fried Rice

30/12/15 - VVG for both. The ham was a nice touch. Don't try to do this the same day you cook the rice, though because it clumps up and takes forever to heat up in the wok.

- 290grams290 grams dry weight uncooked Jasmine rice, cooked (the day before) with a pinch of salt
- 1 1/2Tablespoons1 1/2 Tablespoons olive oil
- 22 eggs, beaten
- 1cup1 cup diced cooked ham (I had 8 oz. of grandfather ham)
- 1 1/2cups1 1/2 cups (180 grams) finely chopped fresh broccoli and/or broccoli stems
- 1/2medium1/2 medium onion, minced
- 2teaspoons2 teaspoons sesame oil
- 2 1/2Tablespoons2 1/2 Tablespoons soy sauce
- 1/2cup1/2 cup frozen peas
- 22 green onions, sliced thin

Preparation
Step 1
Add 1 teaspoon of oil into a wok over medium heat and stir-fry the ham pieces until they have some colour, then remove and set aside. Add another teaspoon of oil and heat on medium for at least 3 minutes. Swirl the oil to cover the pan. Pour in beaten eggs and allow to cook for 2 to 3 minutes and flip and cook for another minute. Remove from skillet and allow to cool. Cut into strips and then into smaller pieces, set aside.
Add remaining tablespoon of oil to the wok and add the onion and broccoli and cook until just starting to soften - they will be cooked through by the time you finish heating the rice. Add the rice in batches and cook for 2 minutes or so. Add soy sauce and sesame oil and mix the rice thoroughly. Season with salt and pepper. Increase heat to medium high and cook for 5 to 8 minutes, until rice is completely heated through and golden brown in spots, being sure to mix occasionally so the rice does not burn.
Add the ham and peas and cook for another 3 to 4 minutes, to heat through, mixing occasionally. Lower heat and add butter, allow to melt, and mix thoroughly. Add eggs and green onions and stir gently. Season with salt & pepper. Serve immediately.
