Ingredients
- 3 super ripe bananas
- 2 T melted coconut oil
- 3 T maple syrup
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 1/2 cups almond flour
- 1 small package blueberries

Step 1
Preheat the oven to 375 F. Mash the bananas in a medium bowl, then mix in the rest of the ingredients except the blueberries. Fold in the blueberries. Spray a mini muffin tin with cooking spray and fill each cup 3/4 full. Bake for 15 minutes.
Note: These mini muffins are a great, filling on-the-go snack-just toss one or two in an airtight plastic bag.
