Ingredients
- Seasoning Mixture:
- 3/4 tsp of each of the following: dried oregano, rosemary, and salt
- 1/4 tsp of each of the following: black pepper and crushed red pepper
- 1-lb. Pork Tenderloin
- 2 Tbsp olive oil
- 1 large onion, halved and thinly sliced
- 1 each green and yellow pepper, cut in thin strips
- 4 medium plum tomatoes, cut in chunks
- Italian Bread, sliced
- 1 clove garlic, cut in half

Step 1
Seasoning mixture: combine all ingredients in small cup. Cut pork on an angle into thin slices. Sprinkle with 2 teaspoons seasoning mixture, pressing it on the meat. Heat oil in a large non-stick skillet over medium-high heat. Add pork and cook 2 to 3 minutes per side until slightly browned and barely pink in the center. Transfer to a plate. Add onion, peppers and rest of the seasoning mixture to the pan. Sauté 10 minutes, or until vegetables are soft and lightly browned. Add tomatoes and cook 3 minutes, stirring often. Add pork and juices to pan. When hot, remove from heat. Rub bread slices with cut side of garlic; arrange on plates. Spoon pork mixture over bread or alongside.
I use red and yellow peppers
I cut and season meat ahead of time and place in fridge till I am ready to use I butter the bread and sprinkle garlic powder over it, then broil for 3 minutes
