Stuffed Zucchini

Ingredients
- 3 medium zucchini
- 1 small red pepper, seeded and chopped
- 1 small onion, quartered
- 2 cloves garlic, peeled
- 1 Tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp dried oregano
- 1/8 tsp black pepper
- 1/2 lb. ground turkey or chicken
- 4 oz feta cheese, crumbled
- 1/4 cup bread crumbs
- 3 Tbsp fresh dill, chopped

Step 1
Heat oven to 400°F. Cut zucchini in half legnthwise. With melon baler or small spoon, carefully scoop out flesh, leaving ¼-inch thick shell. In food processor, pulse zucchini pulp, pepper, onion, and garlic until finely chopped. In 12 – inch skillet, heat 2 ½ cups water until simmering. Add zucchini shells, cut side up; simmer, covered for 4 minutes or until tender. Transfer to shallow baking dish. Remove water from skillet and heat oil over medium-high heat. Cook ground turkey till no longer pink, drain. Add vegetable mixture, salt, oregano and pepper to same pan and cook 3 minutes. Combine turkey, vegetables, feta, bread crumbs and dill and spoon ½ cup filling into each zucchini shell. Bake 7 to 8 minutes.
