Ingredients

  • 2 Tbsp butter
  • 4 chicken breast, boneless-skinless and cut into halves
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 cup white wine
  • 1 chicken bouillon cube
  • 4 oz can tomato sauce
  • 14 oz can diced tomatoes
  • 2 cups sliced mushrooms
  • 1 tsp each: rosemary, oregano, salt

Step 1

Over medium-high heat, melt butter till brown and hot; add chicken and brown on all sides. Add onion and garlic and cook until soft. Add chicken bouillon, wine, herbs and salt; bring to a boil. Reduce wine mixture to half. Add tomato sauce and diced tomatoes; bring back to a boil and simmer covered for 30 minutes. Add mushrooms and cook uncovered for 15 minutes. Serve over hot pasta.
