Almond Chicken

This is a family favorite that my mom has made for years! Play around with the amount of water and chicken bouillon to increase the amount of sauce (this is our favorite part)!

Ingredients

  • 4 Boneless, Skinless Chicken Breasts, cut into 1-inch pieces
  • 4 Chicken Bouillon cubes
  • 1 tsp garlic powder
  • salt and pepper
  • 3-4 cups water
  • 2 Tbsp cornstarch
  • 1 Tbsp butter
  • 1 cup sliced almonds

Preparation

Step 1

In large non-stick skillet, melt butter over medium-high heat. Add almonds and toast till golden brown stirring occasionally. Remove almonds from pan. Increase heat and add more butter or oil if necessary before adding chicken. Salt and pepper chicken. Brown chicken on both sides. Add water, chicken bouillon, and garlic powder to pan. Bring to a boil and simmer covered till chicken is tender and cooked completely through, about 30 minutes. Combine 2 Tbsp cold water to 2 Tbsp cornstarch in a small bow. Add to chicken stirring continuously to thicken gravy. Once thickened, serve immediately. We serve over rice, with steamed broccoli and sauteed mushrooms!
