Ingredients

  • 4-5 sweet potatoes
  • 1 cup sugar
  • 2 eggs
  • 1/2 - 3/4 stick of butter
  • 1/2 cup evaporated milk
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 bag small/mini marshmallows

Preparation

Step 1

Preheat oven to 375.

Wash, peel, dice, and place sweet potatoes in a large pot. Cover with water and boil until tender, 20-30 minutes. Drain potatoes. Beat potatoes with a hand mixer until smooth. Rinse beaters to remove potato strings. Add sugar, eggs, butter, milk, spices, and beat with mixer until well blended.

Place in lightly greased 9x13 casserole dish and bake for 25 minutes. Remove from oven and cover with marshmallows. Return to oven and broil until marshmallows begin to expand and lightly brown. KEEP AN EYE ON MARSHMALLOWS BECAUSE THEY WILL CATCH ON FIRE.
