Ingredients
- 2 Tbsp Butter
- 1 Tbsp Olive Oil
- 1 small Shallot, minced
- 1 1/2 lbs. small White Mushrooms, halved
- 1 tsp fresh Thyme
- 1/4 cup dry Red or White Wine, or water
- Salt and Pepper

Step 1
In large skillet over medium-low heat, melt butter with olive oil. Add shallot; cook until soft, stirring, about 5 minutes. Raise heat to medium. Add mushrooms, salt and pepper. Cook, covered about 5 to 6 minutes until mushrooms release their liquid. Uncover, raise heat to high. Cook, tossing, until liquid has evaporated and mushrooms are brown, 3 to 5 minutes. Add thyme and wine. Cook until skillet is almost dry.
