Ingredients

  • 1 cup White Rice
  • 2 c. Chicken Broth
  • 2 Tbsp Lime Juice
  • 1 1/2 tsp Chili Powder
  • 3/4 tsp Salt
  • 1/4 tsp Cumin
  • 1/4 tsp Pepper
  • 2 Tbsp Olive Oil
  • 1 can Corn
  • 1 Red Bell Pepper, diced
  • 1 rib Celery, diced
  • 1/2 small Purple Onion, diced
  • Cilantro

Step 1

Bring Chicken Broth to a boil in medium saucepan, add rice and bring to a boil again. Reduce to low and cover. Cook till tender 25-20 minutes, drain in colander, rinse with cold water to stop cooking, Whisk lime juice and oil for dressing. Combine all ingredients and toss with dressing.
