Blueberry Muffins
Here is a recipe that I usually whip up on a Sunday evening. I add a cinnamon sugar crumble to top it off. They’re the perfect breakfast treat at the office with a cup of coffee – and I eat mine with a few pieces of sharp cheddar cheese. Delicious!

Ingredients
- Muffins:
- 1.5 cups all purpose flour
- 3/4 cup white sugar
- 1.2 tsp salt
- 2 tsp baking powder
- 1/3 cup vegetable oil
- 1 egg
- 1/3 cup milk
- 1 cup blueberries
- Topping:
- 1/2 cup white sugar
- 1/3 cup flour
- 1/4 cup butter
- 1.5 tsp cinnamon

Preparation
Step 1
Preheat the oven to 400 degrees. Grease or line muffins cups.
Combine flour, sugar, salt, and baking powder. In a separate bowl mix the oil, egg, and milk. Mix into flour mixture and then fold in blueberries. Fill muffins cups.
Optional: To make a crumb topping, mix together remaining ingredients with a fork and crumble over the muffins before baking.
Bake for 20 - 25 minutes.
