Preparation

Step 1

I soaked 1 cup raw almonds in 4 cups water for 24 hours and then processed the mixture in a blender (I am guessing you could use a food processor but gauged that mine wasn't large enough for this volume), moving gradually from low to high speed. I'd estimate I blended for about five minutes total; the longer you blend, the milkier the liquid gets. Toward the end of blending, I added a tablespoon of honey and a teaspoon of vanilla to make the flavor a little more interesting, although still quite mild. I strained the milk through a mesh strainer, pressing the remaining nut meat to squeeze out all the milk.

This makes about four cups of milk. Once you have the basic recipe down, feel free to experiment with flavor! Try adding cinnamon or chai spice, or maybe sweeten it up with some dates.
