Ingredients

  • 1/2 cup Lemon Juice
  • 1/2 cup Sugar
  • 2 tsp finely chopped Onion
  • 1 tsp Dijon Mustard
  • 1/2 tsp salt
  • 2/3 cup vegetable oil
  • 1 Tbsp poppy seeds
  • 1 bunch Romaine lettuce, torn
  • 4 oz Swiss cheese, shredded
  • 1 cup unsalted Cashews
  • 1 medium Apple, chopped
  • 1 medium Pear, chopped
  • 1/4 cup dried Cranberries

Preparation

Step 1

Combine the first 7 ingredients in a small jar a shake vigorously. Refrigerate for 1 hour or until chilled. In a large bowl combine all other ingredients and drizzle with dressing, toss to coat.
