For lemon cream instead of coconut: omit coconut milk & vanilla extract, replace w/additional 1/2 cup soymilk, the juice & finely grated zest of 2 lemons & 1/8 tsp tumeric.

Ingredients

  • cream filling:
  • 1 cup coconut milk
  • 1 cup vanilla soymilk
  • 1/4 cup sugar
  • 2 tbs cornstarch
  • 1 1/2 tsp vanilla
  • crust:
  • 1 1/4 cups whole wheat pastry flour
  • 1/4 cup sugar
  • 1/4 tsp baking powder
  • 1/8 tsp salt
  • 1/4 cup coconut oil
  • 1/2 tsp vanilla
  • 3 to 4 tbs cold water
  • glaze:
  • 1/2 cup apricot jam
  • 2 tbs water
  • 2 to 3 cups asst fresh fruit (berries, cherries, kiwi, figs, stone fruits, bananas, etc), thinly sliced

Preparation

Step 1

Cream:
In small saucepan over medium heat: add coconut milk, soymilk, sugar & cornstarch; cook, whisking often for 3 - 4 mins or until thickened.
Whisk in vanilla, poir mixture into glass bowl & let cool 5 mins
Cover w/plastic wrap to prevent skin from forming. Chill in refrig at least 1 hour.

Crust:
preheat oven to 375
Lightly oil 9" tart pan with removable bottom & place on cookie sheet.
In medium bowl mix together flour, sugar, baking powder,& salt using fork.
Stir in coconut oil & & vanilla til mixture resembles coarse crumbs.
Stir in cold water as needed til mixture comes together to form soft dough. Form dough into ball, then flatten into disk.
Place disk between 2 pieces of parchment & roll into 11" circle.
Remove top parchment, flip dough into prepared pan & center it. Remove rest of parchment.
Press crust evenly into sides & bottom of pan, poke w/fork in several places & bake 15 mins.
Remove from oven & let cool completely.

Glaze:
In small saucepan over medium heat: combine apricot jam & water, cook til melted.
With pastry brush brush 2 - 3 tsp glaze over crust to prevent sogginess, let dry 20 mins. Leave remaining glaze in saucepan.

To assemble:
spread chilled cream into tart; arrange sliced fruit in concentric circles, clusters or as desired over cream.Re-warm glaze & brush over fruit.
Serve immediately or chill.
