Ingredients

  • 3 Eggs
  • 1 c. Sugar
  • 1/2 c. water
  • 1 tsp. Vanilla
  • 3/4 c. Flour
  • 1 tsp. baking powder
  • 1/4 tsp. Salt

  • Filling:
  • 8 oz. pkg Cool Whip
  • 2 c. sliced Fruit (Strawberries)
  • 2 Tbsp. Powdered Sugar

Preparation

Step 1

Preheat oven to 375 degrees.

Grease jelly roll pan and flour well. Beat eggs on high speed for 5 minutes in a small mixing bowl with an electric mixer. Pour into a large mixing bowl. On low speed, very gradually beat in the sugar, water, and vanilla. Add flour, baking powder, and salt; beat. Beating just until smooth. Pour into pan and bake for 10-14 minutes until done and very lightly brown. Loosen cake very carefully and dump on a powdered sugar towel. (I use paper towels) Roll up in towel. Chill in refrigerator for 20 minutes.

Remove and unroll. Spread with filling. Roll back up and chill until ready to serve.
