Ingredients

  • 6 red, yellow, or green bell peppers
  • 1 lb. hamburger
  • 1 pkg. taco seasoning
  • 1 onion, chopped
  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 cup rice, cooked
  • 1 cup cheese
  • avocado, sour cream, shredded cheese

Step 1

Cut tops off peppers, and remove seeds and veins. Place in baking dish and bake 20 minutes at 350 degrees. Remove from oven.

Brown hamburger with chopped onion. Add taco seasoning. Add corn, beans, and rice, mix and stir until combined and hot. Add cheese and stir until melted. Stuff peppers with the mixture. Bake for 15 minutes at 350. Top with thinly sliced avocado, sour cream, and shredded cheese.
