Turkey Chili

Ingredients
- 1 1/2 cups chopped onion
- 2 cloves garlic, minced
- 1 T. olive oil
- 1 (4 oz.) can chopped chilies (mild)
- 1 t. ground cumin
- 1/2 t. dried oregano
- 1/4 t. cayenne pepper
- 1/4 t. salt
- 1 cup chicken broth
- 1 (19 oz.) can kidney beans, drained and rinsed
- 2 cups cooked turkey
- 1/2 cup Monterey Jack cheese, grated

Preparation
Step 1
In 3-quart saucepan, over medium-high heat, saute onions and garlic in olive oil 5 minutes or until onion is tender. Add chilies, cumin, oregano, cayenne pepper, and salt. Cook 1 minute. Stir in chicken broth, kidney beans and turkey. Bring to boil; reduce heat and simmer, uncovered, 20 to 25 minutes or until somewhat thickened. To serve, scoop into bowls and sprinkle with cheese.
