Rainbow Ice Cream Pops

Ingredients
- 1 quart vanilla Ice Cream
- Jell-O - 6 small boxes; grape, berry blue, lime, lemon, orange and cherry
- 3/4 cup chocolate chips
- 1/4 cup oil
- Rainbow Jimmie Sprinkles

Preparation
Step 1
Remove Ice Cream from the freezer and soften for 10 – 15 minutes.
Sprinkle 2-3 tablespoons Grape Jello in a plastic container
Divide Ice Cream into 5 equal parts, spread ice cream over jello {it’s okay if the ice cream is lumpy, I used a spoon that I ran under hot water to help spread it}
Repeat with remaining jello and ice cream
Cover and place in freezer overnight or several hours
Remove from freezer and run hot water on outside of container to loosen
Turn out onto wax paper lined cookie sheet
Using a cookie dough scoop, scoop ice cream and place in mini muffin pan
Place in freezer for 5 - 10 minutes, remove and insert popsicle stick in the center
Return to freezer for 30 minutes
To prepare chocolate, place chips and oil in a microwave safe bowl and heat 20 seconds, stir and continue heating and stirring every 5-10 seconds until completely melted
Let set on counter until room temp, about 15 minutes
Remove ice cream from freezer and take out of muffin pan, use a knife if necessary
Place on wax or parchment paper in the freezer
Working with 1 pop at a time, dip in chocolate and immediately add sprinkles
Return to freezer
Serve straight from the freezer
Notes
Prep time does not include freezing time, since it will vary. These can be made up to a week in advance, after the pops are made, place them in a container and store in freezer.
