Ingredients

  • 1 tablespoon vegetable oil
  • 1 lb boneless chicken breasts, in 1 inch cubes
  • 1 pkg (12 oz) spicy smoked chicken or pork sausage cut into coins
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 1 rib celery, diced
  • 1 1/2 teaspoon cajun seasoning
  • 1 can (14 oz) diced tomatoes with green chilies, drained
  • 1 cup long-grain white rice
  • 1 can (15.5 oz) low-sodium chicken broth

Preparation

Step 1

Heat oil in large lidded skillet over medium-high heat. Add chicken & sausage and saute until chicken is no longer pink but not completely cooked, about 4 minutes.

With slotted spoon, remove chicken & sausage to bowl. Reduce heat to medium and add onion, green pepper, and celery to skillet. Cook vegetables until crisp-tender, about 5 minutes. Stir in cajun seasoning, tomatoes, rice & broth.

Bring to simmer, then cover and reduce heat to medium-low. Simmer 20 minutes, until almost all liquid is absorbed. Stir chicken & sausage back in with any accumulated juices. Cook uncovered about 5 minutes or until rice is tender.
