Mom's Traditional Pasta Salad

This is by far my favorite summer side dish! It really is so easy and goes with almost anything! I also love that it makes A LOT so I usually bring this side dish to pot lucks!

Ingredients
- 12 ounce rotini ( tri colored pasta )
- 1 red peppers ( chopped )
- 1 green peppers ( chopped )
- 1 cucumber ( sliced )
- 6 ounces olives ( sliced )
- 2 tomato ( chopped )
- 7 ounces mushrooms ( can )
- 5 ounces pepperoni ( small package (can use pepperoni minis) )
- 8 ounces cheddar cheese, diced ( Marbled cheddar or Monterey Jack is good )
- 1 red onion ( diced )
- 16 ounce italian dressing

Preparation
Step 1
Cook the pasta as it directs on the package. Pour cooked pasta into a large bowl. Then add the next ingredients. Pour 1 (16 oz.) Italian dressing on salad (you can use fat-free or low-fat if you want). Mix well. Put salad in fridge for a couple of hours before serving. Stir again before serving. Sprinkle grated Parmesan cheese on top.
