Fancy Brussel Sprouts

Ingredients
- 1 lb. Brussels Sprouts, trimmed ends
- 3 carrots
- 1 small onion
- 1 T lemon juice
- 2 T olive oil
- 1 garlic clove, minced
- 1/4 c water
- 1 T honey mustard
- 2 t poppy seeds
- 1/4 c slivered almonds
- Season with pepper if desired.

Preparation
Step 1
Use food processor to grade onion. Sautee onion with garlic and olive oil until translucent. Meanwhile, grade the Brussels sprouts and carrots in food processor. Add lemon juice to Brussels sprout and carrot mixture, then sauté with onion and garlic until sprouts are bright green. In a small bowl, wisk together the water and mustard. Add poppy seeds and mustard mixture, stir, and cook for a few more minutes. Stir in almonds and serve. Serves 4.
