High Protein Bran muffins

The thing that I like the most about this recipe is that it’s a quick and nutritious high protein snack that you can take with you anywhere. Just put a couple of these tasty protein packed muffins in a zip lock bag and you’re good to go!

Ingredients
- 1 cup oat bran
- 1/2 cup flax meal
- 4 scoops protein powder
- 2/3 cup frozen blueberries
- 1 teaspoon stevia
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 3 egg whites or 2 whole eggs
- 1 teaspoon maple extract (or 2 tbsp sugar free maple syrup)
- 2/3 cup water

Step 1
Mix all the ingredients together in a big mixing bowl, spoon the mixture into a muffin pan sprayed with PAM cooking spray, and then bake at 350 degrees for 25 minutes.
