Ingredients
- 1 rotisserie style chicken, shredded
- 1/3 cup nonfat plain greek yogurt
- 1 teaspoon apple cider vinegar
- 1 teaspoon honey
- 1/2 teaspoon garlic powder
- salt and pepper to taste
- 3 celery stalks, chopped
- 1/8 cup Craisins OR 1/2 cup red grapes, halved

Step 1
In a small bowl, mix the yogurt, apple cider vinegar, honey, garlic powder, and salt and pepper.
Mix with the chicken with the celery and Craisins (or grapes, my favorite combo! feel free to add nuts too, chopped pecans or walnuts are delicious). I use a plastic container with a lid so I can store it in the fridge for lunch over next few days.
Eat it plain, or on a bed of lettuce for a low-carb lunch, or as a sandwich with some cheese for added taste. I like to have mine between two leaves of Romaine and eat it like a wrap. Don’t be afraid to experiment with this one. Grapes paired with chicken may sound odd, but the contrast of the sweet, juicy grapes goes well with the tart yogurt. You can also use the greek yogurt in tuna salad as well, just mix it with garlic powder and add some chopped pickles.
