Chicken Parmigiana

Can substitute 1-1/2 pounds of veal for scallopini.

Ingredients
- 2 cups prepared marinara sauce (I used the Bove's marinara sauce)
- 1 large egg
- 2 T. water
- 2/3 cups dry bread crumbs
- 1/3 grated parmesan cheese
- 6-8 boneless chicken breast halves, about 2 pounds
- 1/4 cup olive or vegetable oil
- 2 cups shredded mozzarella cheese (8 ounces)

Preparation
Step 1
1. Flatten chicken between plastic wrap or waxed paper with a meat mallet to 1/4 inch thickness.
2. Heat oven to 350 degrees
3. Mix egg and water. Mix bread crumbs and Parmesan cheese. Dip chicken into egg mixture, then coat with bread crumb mixture.
4. Heat oil in 12- inch skillet over medium heat. Cook half of the chicken at a time in oil about 5 minutes, turning once, until light brown; drain. Repeat with remaining chicken, adding 1 or 2 T. of oil if necessary.
5. Place half the chicken in an ungreased rectangular baking dish, overlapping slices slightly. Spoon half of the sauce over the chicken. Sprinkle with 1 cup of the mozzarella cheese. Repeat with remaining chicken, sauce and cheese.
6. Bake uncovered about 25- 40 minutes or until sauce is bubbly and cheese is light brown,
