Ingredients
- 2 Tablespoons Olive Oil
- 1 Medium Onion
- 2 Carrots
- 2 Ribs Celery
- 3 (or so) medium Red Potatoes
- 1 Bay Leaf
- 1-1/2 Tablespoons Old Bay Seasoning
- 1 Can Red Kidney Beans
- 1 Can Garbanzo Beans
- 1 Can diced Tomatoes
- 2 Cans Chicken or Vegetable stock
- 5 - 6 ounces of Kale

Preparation
Step 1
Combine Olive oil, onion, carrots, celery, potatoes, bay leaf and Old Bay seasoning into a pot.
Cook for 5 to 8 minutes.
Add the beans, tomatoes, stock.
Bring to a boil.
Simmer for 8 to 10 minutes.
Add Kale and serve hot.
This is a big batch, don't double, or do so discretion. I usually use more vegetables.
