Ingredients

  • 2 Tablespoons Olive Oil
  • 1 Medium Onion
  • 2 Carrots
  • 2 Ribs Celery
  • 3 (or so) medium Red Potatoes
  • 1 Bay Leaf
  • 1-1/2 Tablespoons Old Bay Seasoning
  • 1 Can Red Kidney Beans
  • 1 Can Garbanzo Beans
  • 1 Can diced Tomatoes
  • 2 Cans Chicken or Vegetable stock
  • 5 - 6 ounces of Kale

Preparation

Step 1

Combine Olive oil, onion, carrots, celery, potatoes, bay leaf and Old Bay seasoning into a pot.
Cook for 5 to 8 minutes.
Add the beans, tomatoes, stock.
Bring to a boil.
Simmer for 8 to 10 minutes.

Add Kale and serve hot.

This is a big batch, don't double, or do so discretion. I usually use more vegetables.
