Ingredients

  • 1 and 1/3 cups easy pancake mix
  • 3/4 teaspoon ground cinnamon
  • 1/2 cup pecans, finely chopped
  • 1 and 1/4 cups low-fat buttermilk
  • 1 tablespoon canola oil
  • 2 eggs, separated
  • 1 teaspoon vanilla extract
  • 2 cups strawberries, stemmed and sliced
  • 1 large banana, sliced
  • 1 teaspoon sugar

Preparation

Step 1

1. Combine the pancake mix, cinnamon, and pecans in a large bowl. Combine the buttermilk, oil, eggs, and vanilla extract in a separate bowl. Whisk into the pancake mix and stir until smooth. Set aside.

2. Toss the strawberries and banana with the sugar in a medium bowl. Set aside.

3. Preheat a Belgian waffle maker coated with cooking spray. Pour a generous 1/2 cup batter per waffle onto the waffle maker and cook per the manufacturer's directions. Repeat with the remaining batter. Arrange the waffles on 4 serving plates and top each with an equal amount of the fruit mixture.
