Ingredients

  • 12 ounces (1 1/2 8-ounce packages) cream cheese, softened
  • 1/4 cup mayonnaise
  • 1 cup shredded Gruyere cheese, divided (I used heaping measures for cheese
  • 1/4 cup finely chopped parsley, plus more for topping (I used a mixture of parsley, tarragon and chives)
  • 1/4 cup butter
  • 1 small shallot (or one “clove” of a big shallot), finely chopped
  • 1 pound medium fresh baby shrimp
  • 3/4 teaspoon salt and a few grinds of pepper
  • Crackers for serving -- Everybody loved the TJ Everything crackers.

Step 1

Preheat the oven to 350 degrees F and butter a 2-quart baking dish. In a large, heat-proof bowl, beat together the cream cheese, mayonnaise, 3/4 cup of the Gruyere cheese and the herbs.
In a large skillet over medium-high heat, melt the butter. Add the shallot cook until translucent and fragrant, 1-2 minutes, cooking for just about 30 seconds before adding the shrimp. Season with salt and pepper. Bring this to a simmer and then remove it from the heat and pour it into the large bowl with the mayonnaise mixture. Mix together gently until combined. Transfer the dip into your prepared baking dish. Sprinkle it with the remaining 1/4 cup of Gruyere cheese and then bake until bubbly, about 10-12 minutes. Serve immediately.
