Irish Soda Muffins

These muffins are great for St. Patrick's Day or breakfast. Easier to make than soda bread.

Ingredients
- 3 c flour
- 1/4 c sugar
- 1 T baking powder
- 1 1/2 teas baking soda
- 3/4 teas salt
- 6 T cold butter, cut into 6 pieces
- 1/2 c raisins
- 1 1/4 c buttermilk

Step 1
Heat oven to 375. Grease a 12 cup muffin pan. Combine flour, sugar, baking powder, baking soda and salt in a large bowl. With a pastry blender cut in butter until mixture resembles coarse crumbs. Stir in raisins. Gently stir in buttermilk until just blended. Spoon batter evenly into prepared muffin pan. Bake in oven for 25 minutes or until toothpick comes out clean. Serve warm.
