Not everybody likes the idea of a tomato pie - call it a "mock apple" and they'll gobble it down!

Ingredients

  • 8 med green tomatoes (watch out for worms)
  • 1 t grated lemon peel
  • Juice of 1 lemon
  • 1/2 t salt
  • 1/2 t ground cinnamon
  • 3/4 c granulated sugar
  • 2 T cornstarch
  • 1 T unsalted butter

Preparation

Step 1

1. Peel & slice tomatoes.
2. In a saucepan, combine tomatoes w/lemon peel, lemon juice, salt, cinnamon, & nutmeg.
3. Cook tomato mixture over low heat, stirring constantly.
4. Combine sugar & cornstarch & add to tomato mixture.
5. Cook until clear, stirring constantly.
6. Remove from heat.
7. Add butter & let stand until almost cooled.
8. Pour into unbaked pie shell, cover w/top crust.
9. Bake @ 400 for 45 min, or until nicely browned.
