Ingredients
- 4 large red peppers
- 2 tsp olive oil
- 1/4 c. balsamic vinegar
- 1 1/2 tsp sugar
- 1/4 tsp salt
- 1/8 tsp pepper
- 6 (4 oz) chicken breast halves
- 3 T breadcrumbs
- 3 T grated Parmesan cheese
- 1/4 c. flour
- 2 egg whites
- 2 tsp olive oil
- 2 T balsamic vinegar
- 2 T water

Step 1
1.) Cut peppers into strips. Heat 2 T oil in large skillet, add peppers and saute 8 minutes. Add 1/4 c. vinegar, sugar, salt, and pepper. Cook 1 minute. Remove from heat
2.) Combine breadcrumbs and cheese in a shallow dish. Place flour in another shallow dish and egg whites in a third.
Dredge each piece of chicken in flour, dip in egg whites, dredge in breadcrumbs.
3.) Heat 2 T oil in large skillet and add chicken. Cook 3 min on each side and set aside with peppers.
4.) Add 3 T vinegar and water to pan and stir with wooden spoon. Pour mixture over chicken and peppers.
