Ingredients

  • 1 c. oatmeal
  • 1 1/2 c. boiling water
  • 1 c. sugar
  • 1 c. brown sugar
  • 1/2 c. shortening
  • 2 eggs
  • 1 1/2 c. flour
  • 1 tsp salt
  • 1 tsp soda
  • 1 tsp cinnamon

Preparation

Step 1

Pour boiling water over oatmeal and let stand 10 minutes. Cream sugars, shortening and eggs. Beat well.
Mix dry ingredients together and add alternately with oatmeal mixture. Bake at 350 degrees in greased or sprayed 9 x 13 pan for 25 to 30 min. Test with toothpick.
TOPPING:
Make topping and have ready to put on cake when hot from oven.
1/4 c. oleo
1/2 c. brown sugar
1/4 c. canned milk
1 c. coconut
1/2 c. chopped nuts
Spread on top of hot cake and return to oven to brown for 10 minutes.
