I make all 24 at once and freeze what I will not need for the week. I then can pull one out of the freezer the night before and it is ready to eat in the morning.

Ingredients

  • Cooking spray
  • 3 cups shreds of wheat bran cereal (such as All Bran)
  • 1 cup boiling water
  • 3/4 cup raisins
  • 2 1/3 cups flour
  • 3/4 cup sugar
  • 2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups low-fat buttermilk
  • 1/4 cup plus 2 tablespoons vegetable oil
  • 2 large eggs

Step 1

Preheat oven to 350

Combine the first 3 ingredients in a bowl. Stir well. Cover and let stand 10 minutes.

Combine flour and the next 3 ingredients in a large bowl. Stir well. Make a well in the center of the mixture. Combine the buttermilk, oil and eggs in a bowl. Stir well with a whisk. Add cereal mixture and buttermilk mixture to flour mixture stirring just until moist.
Divide batter evenly among muffin cups coated with cooking spray.

Bake 350 for 22 minutes or until wooden pick inserted in center comes out clean

Remove from pans immediately and place on a wire rack.

Note: Store muffin batter in an airtight container in refrigerator for up to 1 week, if desired.
