  • 1-1/2 pound lean ground beef
  • One package taco seasoning mix
  • One green onion, finley diced
  • Two eggs
  • One clove garlic, minced (optional)
  • One block sharp cheddar cheese, cut into small cubes

Preparation

Step 1

Preheat the oven to 425-degrees.

Beat eggs and mix all ingredients except the cheese together.

Mold a tablespoon of meat around a cube of cheese to form a small shaped meatball. Repeat with all meat.

Place on edged cookie sheet (sprayed with nonstick cooking spray) and bake at 425-degrees for seven to ten minutes or until meat is done and cheese has melted.

Recipe makes 10 to 15 servings; less than one carbohydrate per meatball.
