Every Christmas we make caramels. They are fabulous! It really makes the holiday come alive.

Ingredients

  • 2 c Sugar
  • 1 c Corn Syrup (light or dark)
  • 2 c Warm Cream (Heavy Cream)
  • 1/2 t Salt
  • 1/3 c Butter
  • 1 t Vanilla
  • 1/2 c Broken Nuts (Walnuts or Pecans)

Preparation

Step 1

Mix sugar, 1 c cream, corn syrup and salt in large sauce pan. Cook stirring, 10 minutes. Add remaining cream very slowly so that mixture does not stop boiling. Cook 5 minutes more. Stir in butter 1 t at a time. Cok slowly, stirring until 248 degrees on candy thermometer. or until soft ball test. Remove from heat, add vanilla and nuts. Mix gently and pour into buttered 8" square pan and cool. Turn onto board and cut into squares, wrap with wax paper.

**For high altitude 10 degrees lower.

*** For chocolate follow above and add 3-4 ozs unsweetened chocolate prior to cooking.
