  • 8 slices bread crusts removed
  • 3 egg
  • 3 tbs caster sugar
  • 300 mls cream
  • 100 g apricot jam
  • 1/4 cup ground cinnamon

Preparation

Step 1

STEP 1 Preheat oven to 180C.
STEP 2 Spread the bread with apricot jam and sprinkle with cinnamon.
STEP 3 Cut the bread into triangles and arrange in a greased oven-proof dish.
STEP 4 Whisk together the eggs, sugar and cream.
STEP 5 Pour over the bread and bake for 25 minutes.
