Get the pilaf cooking, then make the halibut recipe. After dinner, set out bowls of fruit, yogurt & honey, then give everyone a wine or martini glass & let them make their own beautiful parfaits.

Ingredients
- 1 ripe mango, pitted & cut into 1/4" dice
- 1 avocado, peeled, seeded & finely chopped
- 1 jalapeno pepper, seeded & finely chopped
- 1 small shallot, finely chopped
- 1/3 c chopped fresh cilantro
- 2 t cider vinegar
- 1/4 t salt
- 1 T canola oil
- 4 (6oz) pieces skinless halibut fillet

Preparation
Step 1
In a med bowl, combine mango, avocado, jalapeno, shallot, cilantro, vinegar, & 1/2t salt & toss. Set aside.
Heat a lg nonstick skillet over high heat & add oil. Sprinkle halibut w/remaining 1/4t salt, add to skillet & cook, turning once, until opaque @ the center, ~6 min. Top fillets w/salsa.
