Greek Couscous and Bean Salad

Ingredients

  • Couscous:
  • 1 1/2 c. water
  • 1/4 tsp salt
  • 1 c. uncooked couscous
  • Dressing:
  • 1 T chopped fresh basil
  • 1 tsp chopped fresh oregano
  • 1/4 tsp salt
  • 2 T olive oil
  • 2 T balsamic vinegar
  • Salad:
  • 3/4 c. coarsely chopped cucumber
  • 3/4 c. coarsely chopped yellow or green bell pepper
  • 1/4 c. sliced green onions
  • 1 med tomato, seeded and chopped
  • 1 (15 oz.) can chickpeas

Preparation

Step 1

1.) In a medium saucepan, combine water and 1/4 tsp salt. Bring to boil. Remove from heat and immediately stir in couscous. Cover and stand 5 minutes. Fluff and cool 20 minutes.

2.) In a small bowl, combine all dressing ingredients. Blend well.

3.) In a large bowl, combine couscous and salad ingredients. Pour dressing over salad, toss gently to coat. Refrigerate at least 30 minutes to blend flavors
