Ingredients
- 16 ounces hash brown potatoes (Simply Potatoes)
- 4 eggs
- 4 slices bacon, cooked crisp and crumbled
- 1/4 cup evaporated milk
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon onion powder
- 1 cup shredded cheddar cheese, divided

Preparation
Step 1
Place the bacon, hash browns, milk, eggs, seasonings and ½ cup of the cheese in a bowl, mix well.
Divide mixture into 12 well greased muffin tins and top with the remaining cheese.
Bake at 375 for 20 minutes.
